Ingredients
- Handful spinach
- 2 eggs
- Optional fetta or cottage cheese
- 1/2 Table spoon olive oil
- Sprinkle of salt
- Pepper
- Paprika
Alternatives
- Add kale with the spinach
- Replace olive oil with coconut oil
- Dairy / lactose free cheese
Method
- Chop spinach into smaller pieces and place to the side
- Crack the two eggs into a bowl and whisk
- Add the cheese and spinach, salt, pepper and paprika then whisk all the ingredients
- Add olive oil to a pan and once heated place the egg mixture
- Cook for 5 minutes or until the egg firms up a little. You can either flip it over or leave it to cook through on low heat. Once cooked place the omelette on a plate, ready to serve
