Spinach and cheese omlette

Preparation: 10 minutes


  • Handful spinach
  • 2 eggs
  • Optional fetta or cottage cheese
  • 1/2 Table spoon olive oil
  • Sprinkle of salt
  • Pepper
  • Paprika


  • Add kale with the spinach
  • Replace olive oil with coconut oil
  • Dairy / lactose free cheese


  1. Chop spinach into smaller pieces and place to the side
  2. Crack the two eggs into a bowl and whisk
  3. Add the cheese and spinach, salt, pepper and paprika then whisk all the ingredients
  4. Add olive oil to a pan and once heated place the egg mixture
  5. Cook for 5 minutes or until the egg firms up a little. You can either flip it over or leave it to cook through on low heat. Once cooked place the omelette on a plate, ready to serve
