Minced or potatoe egg

Preparation: 15 minutes


  • 2 – 3 Eggs
  • 150 – 200 Grams minced meat
  • Handful diced spinach
  • 1/4  Diced capsicum
  • Sprinkle salt, pepper and paprika
  • Table spoon of olive oil


  • You could add other vegetables such as mushroom
  • Replace olive oil with coconut oil
  • Replace minced meat with boiled potato


  1. Dice the capsicum and spinach
  2. In a pan add the olive oil in medium heat. Once the pan is warm add the minced meat and close the lid. As it cooks through add salt, pepper and paprika
  3. Once the minced meat is cooked, add the capsicum and spinach and stir
  4. Make room for the eggs in the pan and crack the eggs. Add sprinkle of salt, pepper and paprika on the egg and allow it to cook through
  5. Once cooked, serve on a flat plate
