Ingredients
- 2 – 3 Eggs
- 150 – 200 Grams minced meat
- Handful diced spinach
- 1/4 Diced capsicum
- Sprinkle salt, pepper and paprika
- Table spoon of olive oil
Alternatives
- You could add other vegetables such as mushroom
- Replace olive oil with coconut oil
- Replace minced meat with boiled potato
Method
- Dice the capsicum and spinach
- In a pan add the olive oil in medium heat. Once the pan is warm add the minced meat and close the lid. As it cooks through add salt, pepper and paprika
- Once the minced meat is cooked, add the capsicum and spinach and stir
- Make room for the eggs in the pan and crack the eggs. Add sprinkle of salt, pepper and paprika on the egg and allow it to cook through
- Once cooked, serve on a flat plate
