Ingredients
- 2 Eggs
- 3 Tomatoes
- 2 Green peppers
- 2 Tablespoons olive oil
- Optional: onion
- Sprinkle salt, pepper and paprika
Alternatives
- You can add sujuk or cheddar cheese
- Dairy / lactose-free cheese
- Replace olive oil with coconut oil
Method
- Peel the skin off the tomatoes and dice them into small pieces
- Dice the green pepper into small pieces
- In a pan in low to medium heat, place the olive oil and add the peppers. Once they turn a golden colour add the tomatoes and close the lid for it to simmer in low heat
- Crack the eggs into a separate bowl and whisk. After about 3-4 minutes add the eggs to the pan with the salt, pepper and paprika. Once the egg is cooked the menemen is ready to serve
