Eggplant dip

Preparation: 15 minutes

Ingredients

  • 2 Thinly diced ggplants
  • 1 1/2 Cups yoghurt
  • 2 – 3 Tablespoon olive oil
  • 1/2 Cup water
  • 1/2 Teaspoon salt, pepper and paprika

Method

  1. Pre-heat oven 180 degrees
  2. Place eggplant on an oven proof tray and drizzle the eggplant with olive oil
  3. Cook the eggplant until it becomes golden
  4. In the meantime place yoghurt into a large bowl with water. Add the salt, pepper and paprika then add the eggplant and stir
  5. Place the dip into a smaller bowl and add olive oil with paprika on top
