Preparation: 15 minutes
Ingredients
- 2 Thinly diced ggplants
- 1 1/2 Cups yoghurt
- 2 – 3 Tablespoon olive oil
- 1/2 Cup water
- 1/2 Teaspoon salt, pepper and paprika
Method
- Pre-heat oven 180 degrees
- Place eggplant on an oven proof tray and drizzle the eggplant with olive oil
- Cook the eggplant until it becomes golden
- In the meantime place yoghurt into a large bowl with water. Add the salt, pepper and paprika then add the eggplant and stir
- Place the dip into a smaller bowl and add olive oil with paprika on top
