Ingredients
- 4 – 5 Mushrooms
- 2 Eggs
- 1 Slice fetta or cottage cheese
- 1 Table spoon olive oil
- Optional: kale
- Sprinkle salt, pepper and paprika
Alternatives
- Replace olive oil with coconut oil
Method
- Crack eggs into a bowl with salt pepper, paprika and cheese
- Dice mushrooms, add to the egg mix and whisk
- In a pan on medium heat add olive oil. Once heated add the omelette mix. Cook for 2-3 minutes or until the egg firms up. Either flip it over or allow it to cook through on low heat
- Serve on a flat plate
