Mushroom and cheese omlette

Preparation: 10 minutes


  • 4 – 5 Mushrooms
  • 2 Eggs
  • 1 Slice fetta or cottage cheese
  • 1 Table spoon olive oil
  • Optional: kale
  • Sprinkle salt, pepper and paprika


  • Replace olive oil with coconut oil


  1. Crack eggs into a bowl with salt pepper, paprika and cheese
  2. Dice mushrooms, add to the egg mix and whisk
  3. In a pan on medium heat add olive oil. Once heated add the omelette mix. Cook for 2-3 minutes or until the egg firms up. Either flip it over or allow it to cook through on low heat
  4. Serve on a flat plate
