Barbunya

Preparation: 15 – 20 minutes

Ingredients

  • 1/2 Diced onion
  • 3-4 Tablespoons olive oil
  • 2 Diced carrots
  • Optional: sugar
  • 1 Tablespoon pepper paste
  • 1 Teaspoon paprika
  • 1 Teaspoon pepper
  • 300 Grams kidney beans (organic not canned)
  • Optional: parsley
  • 1 Cup hot water

Method

  1. Boil the kidney beans, once cooked drain it
  2. In a saucepan in medium heat, add olive oil. Once heated, add the onions and stir until the onion is golden brown. Then add the carrots and cook for 2-3 minutes whilst stirring. (Optional to add tiny bit of sugar less than half a teaspoon)
  3. Then add pepper paste, kidney beans, paprika, pepper and stir
  4. Cook for a while and add half a glass of hot water with salt and stir
  5. Serve hot or cold
